Directions

  1. Soak 1/2 thinly sliced red onion in cold water.
  2. Pat dry 4 cups diced watermelon and the 1/2 diced cucumber; toss with the thinly sliced mint.
  3. Drain the onion, squeeze dry and add to the salad.
  4. Add the olive oil and lemon juice; season to taste with salt and toss.
  5. Just before serving toss in chopped cashews and sprinkle with crumbled feta cheese.
