Watermelon Feta and Arugula Salad With Watermelon Vinaigrette

- 2 small jalapenos, stem and seeds removed
- 2 tablespoons red currant jelly
- 1 cup diced watermelon
- 2 tablespoons white wine vinegar
- 1⁄4 teaspoon garlic pepper seasoning
- 1⁄8 teaspoon salt
- 1 teaspoon olive oil
- 6 cups torn mixed salad greens, such as arugula
- 3 cups cubed seeded watermelon
- 1 tomatoes, cut into chunks
- 1⁄2 cup sliced red onion
- 1⁄3 cup crumbled feta cheese
- freshly cracked black pepper
directions
- Make vinaigrette:.
- In a food processor, combine the jalapeno, red currant jelly, watermelon, vinegar, garlic pepper, and salt. Process until smooth. With the machine still running, drizzle in the olive oil. Store in the refrigerator until ready to use. Shake well before using.
- To Serve:.
- In a large, bowl, toss the lettuce with a bit of the dressing. Mound in the center of a large flat serving dish. Surround with watermelon, tomatoes and onions. Crumble feta cheese over the salad. Serve with remainder of dressing on the side.
- Garnish with freshly cracked black pepper.

Although hardly your traditional southern girl, I come from a huge southern family and have been cooking since I was eight years old.
