Watermelon Mojitos

"From Ina Garten's How Easy Is That. Simple syrup is 1 cup water and 1 cup sugar heated in a small pan until sugar dissolves. Be sure to cool before adding to drink."

  • Use a mortar and pestle to smash mint leaves. Remove the rind and seeds from watermelon. Put fruit in a food processor fitted with the steel blade and puree. Put the mashed mint in a large pitcher with 2 cups of the watermelon puree, the rum, simple syrup, and lime juice. Stir to combine.
  • Put ice cubes in glasses, pour mojito mixture over, and garnish with mint.
