  1. Use a mortar and pestle to smash mint leaves. Remove the rind and seeds from watermelon. Put fruit in a food processor fitted with the steel blade and puree. Put the mashed mint in a large pitcher with 2 cups of the watermelon puree, the rum, simple syrup, and lime juice. Stir to combine.
