Directions

  1. Mix first 3 ingredients in a small bowl. Set aside.
  2. In large bowl mix cucumber, watermelon, herbs, (1/4 cup combined mint and sweet & Thai basil is terrific), salt and pepper to taste. Chill. Drain any accumulated watermelon juice. Gently stir in dressing just before serving.
