Watermelon Salad with Tangy Lime Dressing

ingredients
- 946.36 ml watermelon, cubed
- 236.59 ml honeydew melon, cubed
- 236.59 ml cantaloupe, cubed
- 59.14 ml vidalia onions or 59.14 ml other sweet onion, slivered
- 59.14 ml fresh lime juice
- 29.58 ml honey
- 29.58 ml of fresh mint, chopped
- 14.79 ml vegetable oil
- coarse sea salt, to taste
- fresh coarse ground black pepper, to taste
directions
- Whisk lime juice, honey, mint, and oil together until honey is dissolved.
- Combine the melons and onion in a large bowl.
- Toss melon mixture with lime dressing to coat.
- Garnish with salt and pepper to taste.

Made for ZWT 7: This recipes is delicious and refreshing! I used fresh mint from my garden and chopped chives instead of the onion as I had no onion on hand. The combination of the herbs with the melon and lime dressing is uniquie and just bursting with summertime flavour. I highly recommend this salad!

I love watermelon and honeydew so this is right up my taste buds. OK I must admit I was nervous with the onions and the pepper ingredients but NOT ANYMORE! I just touched the pepper shaker I admit but the flavors were to die for! I loved the flavor combination and how wonderful to serve this during the summer for picnics instead of jus tthe plain watermelon-melon sald. I tossed on a few mint leaves whole for garnish to pretty up. That lasted less than a second as the guys dug in. I loved it thank you Lori. Made for ZWT2011 The Shady Ladies.

This was very refreshing and delicious. I used prefect red watermelon, honeydew but no cantaloupe as I didn't have any on hand I just added additional amounts of the other two melons. I used vidalia onion, creamed honey, canola oil to be soy free, plus the rest of the ingredients. Serve right away for best texture and taste. I found if it sat too long it produced too much liquid and sitting a very long time the mint flavour became a bit too strong. I would make this again!! Hey there! I am the wife of my dh, Steve, to whom I've been married a very short 12yrs. I am also the SAHM of three boys (11yo and 4yo at home, 23yo on his own). LOL I graduated from Ball State University with a BS in Pre-Professional Psychology, which I get use of here at home frequently. I have a extensive collection of cookbooks, but have found that Zaar has taken care of my appetite for any hands on cookbooks. I just love to bake, especially for the high school football team here during the fall. It is my favorite time of the year......sweaters, bonfires, leaves, pumpkins, caramel apples, football, all the stuff about fall is fun!
