Weeknight Easy Pasta & Tomato Toss

"This is an easy dish that I like to make sometimes when my husband is working late for just me & my son or any other time when we are busy in the evening. In the recipe below, I use Penne but you can use any pasta shape that you like."

  • In a large salted pot of water, cook penne according to package instructions less 1 minute. Drain but reserve 1/4 cup of the pasta water.
  • Heat oil in a large skillet over medium high heat and add onion. Cook until translucent. Reduce heat to medium and add garlic and tomatoes. Season with salt and pepper. Cook for about 3-4 minutes.
  • Add pasta and pasta water to the skillet. Add cheeses and stir well. Turn off heat. Add basil. Toss and serve.
  • Often I will also add a sprinkle of pine nuts when serving.
