Weeknight Easy Pasta & Tomato Toss

- 8 ounces penne
- 1 cup grape tomatoes, halved
- 1⁄2 cup red onion, diced
- 1⁄4 cup basil leaves, washed and torn
- 1⁄3 cup mozzarella cheese, cut into bite-sized cubes
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 1⁄4 cup parmesan cheese
- salt
- pepper
directions
- In a large salted pot of water, cook penne according to package instructions less 1 minute. Drain but reserve 1/4 cup of the pasta water.
- Heat oil in a large skillet over medium high heat and add onion. Cook until translucent. Reduce heat to medium and add garlic and tomatoes. Season with salt and pepper. Cook for about 3-4 minutes.
- Add pasta and pasta water to the skillet. Add cheeses and stir well. Turn off heat. Add basil. Toss and serve.
- Often I will also add a sprinkle of pine nuts when serving.
