Weight Watchers Italian Zero Points Soup

The following are variations that can be added to the soup with the accompanying POINTS: 1 ½ Tbsp grated parmesan cheese, POINTS value: 1 2 oz cooked chicken sausage, POINTS value: 3 2 Tbsp cooked chickpeas, POINTS value: ½ 2 Tbsp cooked orzo, POINTS value: ½ 2 small, store-bought turkey meatballs, POINTS value: 2"

  • Put escarole, garlic, onions, spinach, zucchini, red pepper, fennel bulb, vegetable broth, diced tomatoes, red pepper flakes, thyme and oregano into a large soup pot; stir to combine.
  • Cover and bring to a boil over high heat.
  • Reduce heat to low, and simmer, partly covered, for about 10 minutes.
  • Stir in salt, black pepper, parsley and basil. Serve.
  • Serving Size: about 1 cup.

  1. I have made this many times, sometimes following the ingredients exactly, sometimes substituting if I don't have something on hand. Not a big escorole fan so I double the spinach. Also double the chili peppers as I like a little more heat. The only thing I found was a little off was the cooking time. I didn't find :10 was enough. I like my soup a little less crunchy. But other than that it is fabulous!
     
  2. I put practically every veggie I had in the fridge in this soup. Mushrooms, califlower, leeks - in addition to the veggies listed. YUMMY! So satisfying, and I cannot believe it is ZERO points. I garnished my bowl with a Tbsp of freshly grated parmesan (1 point) and it was absolutely perfect. I'll be making this again!
     
  3. Smells delicious and fill sthe whole house with a savoury home-cooking scent I just can't resist. Very yummy!
     
  4. I made this soup a week ago, and froze it in 1 cup servings. It freezes well, and the one cup size is convinient for packing in lunches to take to work. Even my DH who is not on WW, enjoyed it. He said it smelled so good, that he couldn't not try it! Thanks for posting.
