  1. I love love the taste of this tuna salad palmtree. I used LF mayo and lite sour cream. This was my first time using roasted red pepper. The flavor this adds to the recipe is really :yummy:.   2. Wonderful recipe, healthy, low in points for the WW plan and full of flavor. Except for cutting this down to serve two I made as directed, then served on those new 100 cal buns, and topped with lettuce leaves. Lovely, filling and healthy lunch. Made for April 2011 TOTM
     
  3. What a delicious salad. I also used low fat ingredients. I served mine on toasted whole wheat bread for a wonderful sandwich. I cut the recipe in half and it worked great. Thanks for posting. Made for Fall PAC 2009 :)
     
  4. I squeezed the tuna dry, added light mayo and light sour cream (don't like fat free)and followed the recipe for everything else. This was very good !! I look forward to making this again!

<p>I live on the Gulf Coast of Florida with my husband, David, 3 children, 3 cats and 2 goofy pugs. I'm originally from upstate New York and have lived in Florida for 18 years. The summers are very long here and you spend most of your time inside because of the terrible heat and humidity. Before becoming a stay at home mom, I worked for 6 years as the Catering Coordinator for The Belleview Biltmore Resort &amp; Spa, the oldest, largest wooden structure in the world, located in Clearwater, Florida. I LOVE cooking and entertaining. <br />Trying to feed a family of 5 on one income can be tricky at times so I am always looking for new ideas and recipes. That is how I happened upon RZ. <br />Cooking has become my passion for keeping me sane. I don't like being stuck indoors most of the year! The plus side to living in this climate is the yearly abundance of fresh produce.
