- 2 tablespoons lemon juice
- 1 tablespoon extra-virgin olive oil
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1 loaf whole wheat ciabatta, split, soft centers removed
- 4 red leaf lettuce leaves
- 1 yellow bell pepper, sliced
- 6 radishes, thinly sliced
- 1⁄2 small red onion, thinly sliced
- 1 small zucchini, thinly sliced
- 2 tomatoes, thinly sliced
- 6 ounces part-skim mozzarella cheese, thinly sliced
- 1 cup packed fresh basil leaf
directions
- To make the dressing, combine the lemon juice, oil, salt, and pepper in a small bowl, beating with a whisk until blended. Brush the cut side of the top half of the bread with 1 tbsp of the dressing and set aside.
- Layer the remaining bread with the lettuce, bell pepper, and radishes; drizzle with 2 teaspoons of the dressing. Layer with the onion and zucchini and drizzle another 2 tsp of dressing. Layer with the tomatoes and cheese and drizzle with the remaining dressing. Add the basil and cover with the reserved bread, cut side down, pressing it firmly.
- With a serrated knife, cut the loaf crosswise into 6 pieces.

I am finally learning how to cook thanks to recipezaar! I haven't really made up any of my own recipes yet, but I have made a lot of the ones posted on here. Asian food is my favorite thing to make, and I also enjoy making desserts (especially cheesecake). I am amazed by how easy it has been for me to learn how to cook. I always used to think cooking was so hard and time-consuming, but I learned that once you have all the ingredients and proper equipment on hand it's not very difficult. I used to only cook stuff in the microwave or in the crockpot, but since I joined recipezaar I have been working my way up to more and more challenging recipes.
