- 2 cups cooked quinoa
- 1 small cucumber, diced
- 1 red bell pepper, diced
- 1 pint cherry tomatoes, halved
- 2 cups broccoli florets, steamed
- 1⁄2 cup green peas
- 1⁄2 cup carrot, shredded
- 2 cups cannellini beans or 2 cups garbanzo beans, cooked
- 1 (16 ounce) bottle Italian dressing
- fresh basil, for garnish
directions
- Mix the quinoa, veggies, and beans together.
- Add as much Italian dressing as you want.
- Top with chiffonade of fresh basil.
- Chill before serving.
