“This is something I threw together last minute to take to a family brunch when I was notified that the only vegetarian dish on the menu was Mimosas. It ended up being a huge hit. At a former job, I made it once for a potluck and my coworkers ended up requesting "that weirdo vegetarian salad" for every subsequent potluck. You could easily adapt this to include whatever veggies you have on hand. Sometimes I add cauliflower if I've got some hanging around in the fridge. Preparation time includes the time to cook the quinoa, but not the time to cook dried beans as I almost always use canned.”
