- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 2 teaspoons ginger
- 1⁄2 teaspoon clove
- 1⁄2 teaspoon allspice
- 1⁄2 teaspoon salt
- 1⁄2 cup shortening, room temperature
- 1⁄4 cup butter, room temperature
- 1 egg
- 1⁄3 cup molasses
- 3⁄4 cup dark brown sugar, firmly packed
- 1⁄2 cup granulated sugar
directions
- Combine flour, baking soda, spices, and salt in a small bowl. Whisk together.
- Combine brown sugar, shortening, and butter. Beat well.
- Add egg and molasses. Beat well.
- Add flour mixture. Mix until combined.
- Chill dough for at least 30 minutes, preferably longer.
- Preheat oven to 350 degrees.
- Form dough into 1 1/4 inch balls. Roll in granulated sugar and place on cookie sheet.
- Bake at 350 degrees for approximately 11-12 minutes, or until cookies are cracked slightly on top but are still very soft to the touch.
- Allow to cool 2 minutes on cookie sheet, then move to rack to cool completely before storing.
