"i made these as a treat to welcome my parents home from a trip... they both kept coming back to the kitchen saying "i'm just going to have one more..." if you manage to keep some around for a few days, fear not -- they stay fabulously chewy and delicious!   • Combine flour, baking soda, spices, and salt in a small bowl. Whisk together.
  • Combine brown sugar, shortening, and butter. Beat well.
  • Add egg and molasses. Beat well.
  • Add flour mixture. Mix until combined.
  • Chill dough for at least 30 minutes, preferably longer.
  • Preheat oven to 350 degrees.
  • Form dough into 1 1/4 inch balls. Roll in granulated sugar and place on cookie sheet.
  • Bake at 350 degrees for approximately 11-12 minutes, or until cookies are cracked slightly on top but are still very soft to the touch.
  • Allow to cool 2 minutes on cookie sheet, then move to rack to cool completely before storing.
