Welfare Cookies

"This is good!!! I tasted it at a party and was so surprised to learn that the base of the cookie was a saltine cracker. I haven't made this myself, but plan to do so in the near future. Just thought I would submit it because it is so different."

  • Preheat oven to 350 degrees.
  • Spray your baking pan with cooking spray OR line with aluminum foil.
  • Line cookie sheet with the crackers, breaking the end pieces to fit the pan.
  • Melt the butter in a saucepan, stir in the sugar; bring to a boil stirring constantly until the the sugar is melted and turns a light caramel color.
  • Spread sugar mixture on crackers and place in oven for 10 minutes.
  • Remove pan from oven& sprinkle chocolate chips over all.
  • Spread with a knife when chips melt enough to do so.
  • Sprinkle with crushed walnuts.

  1. I once had a recipe similar to this and I had misplaced it. I am so glad to have it again! I used slivered almonds instead of the walnuts. I had made these for a bridal shower and in keeping with the Bride's colors, I also added crushed red smarties along with the almonds. (I think that adding multi-colored crushed smarties on top would make a pretty snack as well.)
     
  2. I am so glad that I can update my review. The first time I made these cookies, I just threw the margarine and sugar in a pot on the stove to heat. Unfortunately the sugar turned into a mass on the bottom and the margarine melted on the top. Well I made it again this weekend as an extra dessert. We were getting together with friends who have 7 children so I wanted an extra easy dessert on hand. This time I melted the margarine and then slowly added the sugar. It came out much better. Really easy after that and my kids liked sprinkiling on the chips. I used chocolate and vanilla chips and it looked very pretty and they gobbled them up too.
     
  3. This recipe desearves a better title! It is absolutely delicious. The only things I changed were the nuts and the chips. I had Butterscotch chips on hand and pecans. (cut is as soon as you can and get it out of the pan before it hardens). This candy is even better than a "Heath Bar"! and sooo simple to make! Thanks.

  5. Absolutely delicious. DH and the kids loved them, along with every other kid that entered our house this weekend. I also used butterscotch chipts as I ran out of the chocolate ones. Next time I will try it with chocolate chips. Thanks for posting a great recipe that is simple to make.

  1. This was just WAY TOO EASY! I'm not one to make sweets, and candy certainly intimidates me.... but I gave these a try and they turned out perfectly! I used pecans instead of walnuts, and lined the pan with tinfoil. Clean up couldn't have been easier! 5 stars for a great treat and the ease of making it!
     
  2. These are very good! The name of these is actually fools toffee in part because they are so much like Heath toffee bars. I used almonds instead of walnuts on mine since I like them more.

  4. I have the same recipe but I use brown sugar and instead of saltines I use graham crackers. This little cookies are always a great hit.
     
  5. I love these! I use brown sugar instead of white sugar. It tastes like heath bars! Wonderful recipe!

Hubby and I were fortunate enough to be able to retire early and now enjoy traveling in our motorhome :) . Our travels have taken us all over this great country of ours and meeting new and exciting people along the way is an extra bonus. We are blessed. We usually alternate between Florida Keys and Arizona for the winters. The rest of the year, you can find us just about any place. We love our home on the lake, but there is a bit of gypsy in us both and we hit the road as much as we possibly can. I subscribe to Taste of Home and own EVERY Southern Living Annual since 1979. I guess my biggest pet peeve is people who are negative all the time. Because I enjoy life so much, I try to avoid such people. Life is too short.
