ingredients
- 4 slices bread
- 4 tablespoons unsalted butter
- 8 ounces cheddar cheese, grated
- 1⁄4 cup ale, the stronger the better
- 2 teaspoons English mustard
- salt
- pepper
directions
- Toast the bread on both sides.
- Melt the butter in a heavy saucepan over a low heat.
- Add the cheese and ale, stirring constantly.
- Add mustard, and salt and pepper to taste.
- Spread on toast and grill or broil until browned and bubbling.

Made this for DH so I halved the ingredients. He loved this. I made as written, althpugh I used only a normal beer (Victoria Bitter) I had on hand. DH loved this I had enough for 3 slices of bread and with 1 of the slices I used some shaved ham first and then topped with the cheese mix all I can say is............devoured thsi! Such a quick and very easy recipe to make. This would be great for a quick and easy weekend dinner or lunch, and perfect on a cold winters day! Thanks mersaydees, a great keeper for the next quick, easy and very tasty meal!

We liked it! Like the last reviewer, I'm not crazy about beer, but I'd always wanted to try Welsh Rarebit so I decided to take the plunge. I used a black German beer and added a dash of Worcestershire, delicious! The beer adds a depth of flavor without adding that "beer taste." The only drawback is that the sauce seemed a little greasy, I will definitely make this again but cut back on the amount of butter in the sauce. Thank you for posting Mersaydees! Very tasty indeed ! I used a good dark Belgium beer and even though I am not a lover of beer on it's own, it smelt and tasted excellent!!! I made half the amount for myself for breakfast and afterwards wished that I'd made more... that's surely a good sign for any recipe. Please see my rating system: I have given this recipe 5 stars because the additional flavour that a good beer imparts is unexpected and very nice indeed, and that this recipe is fairly quick to make . This is homely cooking at it's simple best. Obviously the quality of your beer may influence the result for this recipe but one small bottle of good beer would go a long way indeed if you were making this for a crowd. Great recipe, Thanks!
