- 1 lb lima beans, dried
- 3 cups water
- 1 lb ground beef
- 3 slices bacon, minced
- 1⁄3 cup brown sugar
- 1 bell pepper, minced
- 1 onion, chopped
- 1 garlic clove, minced
- 4 tablespoons oil, it said fat
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 (16 ounce) can tomato sauce
directions
- soak the beans in 3 cups water for at least 4 hours.
- simmer for 45 minutes.
- until beans are firm but not mushy.
- keep beans whole.
- fry meat in the fat with onion pepper ( i added garlic).
- drain the juice from the beans (keep)and put beans in large baking dish ( or smaller ones if freezing).
- add juice to meat mixture with tomato sauce.
- add brown sugar.
- over the top then add bacon pieces.
- bake 1 hour in moderate 375 degree oven this dish can be prepared day before and then baked when needed.
