directions

  • Stir together first 4 ingredients (flour, sugar, soda, salt) in an ungreased 12x8 inch baking dish or pan.
  • Make three 'wells' in the mixture; pour oil in one, vinegar in one and vanilla in one.
  • Pour in coffee and stir all with a fork until well mixed. Spread evenly in pan.
  • Combine 1/3 cup sugar and 1/2 tsp cinnamon ; sprinkle half over the batter.
  • Bake in a 350 degree oven for 35 to 40 minutes.
  • Sprinkle remaining cinnamon sugar over hot cake. Cool 15-20 minutes before cutting.

  1. You can make this even when you are stumbling around in the morning, not quite aware of your surroundings. I found it a bit too sweet, but it was scarfed up without reservation by the gang. Love the coffee in it, which I think made it much more interesting than similar cakes.
     
  2. This is a joy and a snap to make! Great flavors. At the time I made this, in step 1 I stirred together the first 5 ingredients, otherwise, wouldn't get the cocoa in there! Also, didn't have a 12x8-inch baking pan, so used an 11x9-inch. Thanks, FolkDiva! Made for Newest Zaar Tag.

I grew up in rural east Texas and Louisiana before being transplanted to the beautiful state of Kentucky at the age of 17....so for the most part, my 'hard drive' is programmed for rich, southern style food. Recipes for things like mashed potatoes, cream gravy, pot roast, chicken fried steak and chili are burned in to my DNA!! ?I will never deny my love for rich, southern foods and I'm not a fan of stripping away all the fat and flavor in order to lighten up my favorite southern staples, however (fortunately) my culinary horizons expand beyond my roots and I love finding new foods and new ways of cooking that are just as delicious and in many cases much healthier. ?I do receive an incredible amount of joy from feeding others....a trait I definately attribute to my southern roots.
