Wheat Berry Salad With Fruit & Feta

“Hearty, flavorful and filling. My husband and I were both suprised at how delicious this was. The included ingredients really give a full, complete flavor to the dish. I compiled this after reading through several recipes and not being satisfied. This would be a great side dish, but we eat it as a one-dish meal.”

Directions

  1. Starting with about 7 Cups of water, boil wheat for 1 hour, keeping the water level about an inch above the wheat. (You will need to add water periodically.).
  2. Roast Almonds by baking on a cookie sheet or pan at 400* for 10 minutes, stirring/flipping after 5 minutes. Set aside to cool, then chop to desired size.
  3. Peel and cut apples, finely grate orange zest, juice orange (chunks in the juice are okay.).
  4. When wheat is done boiling (it should have a tender, rubbery consistency), drain and rinse with cold water. Drain well.
  5. My feta was herb-soaked in a garlic, olive oil, lemon juice, rosemary, dill mix. It adds a lot to the salad.
  6. Mix everything together. You can serve it right away, but it gets even better the next day.
