  1. Heat 1 tbs oil in a medium size skillet over medium heat. Add the seitan and cook until browned on all sides, about 5 minutes. Remove from the skillet with a slotted spoon and set aside in a bowl. Deglaze the pan with the wine, stirring to scrape up any browned bits. Simmer the wine until it reduces by half and pour on top of the seitan.
  2. Without cleaning the skillet, heat the remaining 1 tbs oil over medium heat. Add the onion, carrot, and celery, cover, and cook until softened, about 5 minutes.
  3. Transfer cooked vegetables to a 4-quart slow cooker. Add the bell pepper, garlic, tomatoes, tomato paste mixture, oregano, and bay leaves, and season with salt and pepper. Add the seitan and reduced wine, cover, and cook on low for 6 to 8 hours. Remove ad discard the bay leaves before serving.
