  • In a heatproof bowl set over a saucepan of simmering water, combine egg whites, sugar, a pinch of salt and the water.
  • Cook over medium heat, stirring constantly until sugar has dissolved, 2-3 minutes.
  • Transfer to a large bowl. Using an electric mixer, beat on medium-high speed until glossy, stiff peaks form-about 3 minutes (do not overbeat).
  • Reduce speed to low, add vanilla and beat just until combined.
  • Use immediately.

  1. You know, I just posted this recipe as well, and I actually tried it (the chocolate variation), and the cakes came out PHENOMENIALLY! The frosting? I wasn't so hot about. I'm going to delete my recipe since you have posted this here, but maybe I'm just not a fan of egg-based frostings? Someone had suggested that I try to put it in the broiler after I frosted it to toast it a little, but when it says "Use Immediately", they MEAN it. You cannot let this set overnight!
