Whipped Lingonberry Porridge (Vispipuuro)

"Vispipuuro (Finnish whipped porridge) or klappgröt (Swedish name) is a sweet, wheat semolina (manna) dessert porridge made with berries, usually lingonberries. It's eaten in both Sweden and Finland. The semolina is cooked with the berries and also some kind of sweetener. After the mixture has cooled down, the porridge is vigorously whipped to a light, mousse-like consistency. The dessert is usually served with milk and sugar. Other berries and fruit that can be used are cranberries, apricots, gooseberries and strawberries."

  • Bring the water to a boil in a saucepan.
  • Mash the lingonberries and add them to the saucepan together with the sugar and salt.
  • Boil for approximately 10 minutes.
  • Strain the liquid and pour it back into the saucepan.
  • Add the semolina, stir well and cook at a low heat for 15 more minutes.
  • Set aside to cool. When the porridge has cooled, pour it into a mixing bowl and whip it with a hand mixer, until light.
  • Serve with sugar and milk.

  2. (I wrote a review earlier today, but it didn't show up yet, so I'll try again.) Wonderful recipe! Thanks so much for this. I made it last night with lingonberries I picked myself. :-) This was one of my favorite things when I visited many years ago as an exchange student, and was so pleased to find your recipe. I didn't have a sieve so didn't strain the juice, but it was still fine. Also, I whipped it by hand while still lukewarm until it was cool, and it got nice and fluffy (maybe a bit less so than with a hand mixer). Thanks again!
