White Balsamic Chutney

- 2 cooking apples, cored & chopped
- 2 onions, peeled & very finely chopped
- 2 ounces dried apricots
- 1 ounce raisins
- 5 ounces sugar
- 1 cup white balsamic vinegar
- fresh ground black pepper
directions
- Place the apples, onions, apricots, raisins, sugar, vinegar and black pepper in a saucepan.
- Bring to the boil and then simmer gently for 30 minutes until the mixture has reduced, thickened slightly and turned a golden colour.
- Cool slightly and transfer into 2 sterilized jars. Seal and store in a cool cupboard.
