White Bean, Chicken and Goat Cheese Bowties

- 1 lb bow tie pasta
- 2 boneless chicken breasts
- 1 (28 ounce) can chopped tomatoes
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 tablespoon balsamic vinegar
- 1 (15 1/2 ounce) can cannellini beans, drained
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 ounces goat cheese
- parmesan cheese (optional)
- salt and pepper
directions
- Cook pasta according to package directions.
- Slice the chicken breast, sprinkle with salt and pepper and saute it until cooked through over medium heat. Remove from pan.
- In same pan that chicken was cooked in, add the chopped onions and the garlic, saute on medium heat for about 2 minuets, until they soften. Add the chopped tomatoes, chicken, beans, thyme, bay leaf and balsamic vinegar.
- Cook for about 20 minuets. If the sauce looks to be to thick, add some pasta water to loosen it up. Remove from heat.
- Once pasta is cooked, add it to the saute pan with the chicken mixture. Stir well. Crumble the goat cheese and toss it with the pasta gently.
- Serve with additional parmesan cheese if desired.
