  • Cook pasta according to package directions.
  • Slice the chicken breast, sprinkle with salt and pepper and saute it until cooked through over medium heat. Remove from pan.
  • In same pan that chicken was cooked in, add the chopped onions and the garlic, saute on medium heat for about 2 minuets, until they soften. Add the chopped tomatoes, chicken, beans, thyme, bay leaf and balsamic vinegar.
  • Cook for about 20 minuets. If the sauce looks to be to thick, add some pasta water to loosen it up. Remove from heat.
  • Once pasta is cooked, add it to the saute pan with the chicken mixture. Stir well. Crumble the goat cheese and toss it with the pasta gently.
  • Serve with additional parmesan cheese if desired.
