“I was looking for OAMC recipes, and as I was looking at those shops that you can go into and make stuff and take it home, they had a posting for white bean chili with chicken and so of COURSE I had to go look it up on my own and ran across Paula Deen's recipe. I LOVE her cooking! I'm posting it here so I can save it for when I do my cooking with a friend this month. Sounds yummy!”

  1. Rinse beans well, cover with cool water, and soak for 2 hours. Drain.
  2. Place beans in large pot with chicken stock and bring to a boil over high heat. In a saucepan, heat butter over medium heat.
  3. Add garlic, onion, and chiles and saute for 5 minutes.
  4. Add chile mixture to pot with beans. Add chicken, cumin, oregano, pepper, white pepper, red pepper flakes, and cilantro.
  5. Lower heat to medium and cook, stirring occasionally, for approximately 1 1/2 hours.
  6. Serve with cornbread, if desired.
