White Bean Salad

  • Rinse and drain beans. Pour the beans into a medium bowl then add the vegetables and stir.
  • In blender, blend together garlic and remaining ingredients, then pour into vegetable mixture.
  • Stir well and allow to marinate in the refrigerator for at least one hour.

  1. This was good. I wish I had diced my peppers a little finer and yes, used much less olive oil. 1/2 cup would be plenty. The flavors are good & it's quick & easy to assemble. this is good for multiplying for a crowd.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
