White Bean Salad

"I've combined a few different recipes for a delicious healthy lunch. It is very versatile and you can add whatever you like. Sometimes I add capers or sun dried tomatoes. Serve on a bed of lettuce."

  • Drain the beans and rinse under cold water.
  • Into a food processor or blender, put the garlic, olive oil, lemon juice, balsamic basil leaves, cumin, salt and pepper.
  • In a bowl, toss the beans with the dressing.
  • Let the flavors meld for about half an hour.
  • Best served at room temperature.

I love to cook, but with two picky kids (ages 5 and 8) and no free time, I have a limited ability to be creative these days. I try to feed my family healthy foods so am always looking for quick, but wholesome meals. I usually only review the recipes that we found to be outstanding or very good. If something came out badly or I changed it drastically, I don't feel that it's fair to give it a poor review.
