White Bean Salad

- 1 (19 ounce) can cannellini beans
- 1 -2 garlic clove
- 1⁄4 cup extra virgin olive oil
- 1⁄4 cup balsamic vinegar
- 1⁄2 lemon, juice of
- 1⁄2 cup basil leaves
- 1 teaspoon ground cumin
- sea salt, pepper

directions
- Drain the beans and rinse under cold water.
- Into a food processor or blender, put the garlic, olive oil, lemon juice, balsamic basil leaves, cumin, salt and pepper.
- In a bowl, toss the beans with the dressing.
- Let the flavors meld for about half an hour.
- Best served at room temperature.
