White Bean Salad

- 1⁄4 cup olive oil
- 3 garlic cloves, minced
- 2 (15 ounce) cans cannellini beans, drained and rinsed
- 1⁄2 cup tomatoes, diced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1⁄2 cup fresh basil leaf, roughly chopped
directions
- In a small saucepan, heat olive oil and cook the garlic for 1-2 minutes. In a salad bowl, combine beans, tomato, salt, black pepper and basil leaves. Pour warm garlic oil over the salad and combine. Chill for at least 30 minutes.

Made this pretty much as given, although I did use just 1/2 teaspoon of salt & then 1 teaspoon of lemon pepper rather than the full measure of salt & pepper as listed! The salad was very satisfying & flavorful, we thought! Thanks for sharing it! [Made & reviewed for one of my adoptees in this Spring's round of Pick A Chef]
