White Chocolate and Raspberry Muffins

- 300 g plain flour
- 2 teaspoons baking powder
- 150 g caster sugar
- 1 egg
- 1 teaspoon vanilla extract
- 225 ml milk
- 50 g butter, melted
- 100 g fresh raspberries
- 75 g chopped white chocolate
directions
- Preheat the oven to 200°C Cut parchment or greaseproof paper into 6in circles and push, creasing the paper to fit, into a muffin tin.
- Sift the flour and baking powder into a large bowl and stir in the sugar.
- Crack the egg into a separate bowl and whisk in the vanilla extract, milk and melted butter.
- Stir the liquid into the dry ingredients with the raspberries and chocolate, taking care not to over-mix.
- Spoon the mixture into the parchment cases and bake for 30 minutes until golden brown.

I love trying different kinds of food, playing with flavours. I inherited it from my dad. We used to spend every Sunday, cooking something new. It was like a special day for us to spend time together.
Apart from cooking, I also love travelling. My favourite places are Jamaica, and Morocco. Nothing like sitting by the side of the road somewhere, eating Jerk Chicken or a Moroccan Sandwich!
