  • Melt butter and 1 cup white chocolate chips in small saucepan, stirring until smooth; set aside.
  • Beat eggs and sugar on high speed of electric mixer until thick and light, about 5 minutes.
  • Stir in melted chocolate mixture, flour and vanilla.
  • Mix well.
  • Spread half of batter in greased 9" square cake pan.
  • Bake at 325°F for 20-25 minutes, or until light golden.
  • Cool 5 minutes.
  • Spread jam on top.
  • Stir 1 cup white chocolate chips into remaining batter.
  • Drop by spoonfuls evenly over jam.
  • Spread out gently.
  • Sprinkle with nuts.
  • Bake 30-40 minutes longer, or until set.
  • Cool completely then cut into squares.

  1. At first when I made these, I ate it right out of the oven. Bad mistake, didn't taste very well, and it kinda slid apart. But once they cooled off they were awesome. I will make again, but I would undercook the first layer by a minute or 2. I cooked it until done, and by the time the second cooking was done, the bottom layer was a little "over" done. I will also melt the apricot jam in the microwave before spreading it over the first layer. Thank you for sharing this recipe.
     
  2. OH MY GOODNESS!! You are not kidding - these are one of the best square recipes I have ever had - WOW! A definte treat to serve to friends and family! A bit of work, but well worth the effort!
     
  3. apricots and white chocolate has now become my new favorite combination! wow, worth gaining weight, my guests did not believe that these exquisite squares were not from a gourmet bakery. and to make it even better they are very simple to make.

  5. Yes! Perfectly srcumptious. I undercooked the bottom layer a tad, and it came out beautifully. Seemed like it would be a lot of work, but it wasn't too bad. Definitely a keeper!
