White Chocolate Raspberry Pancakes

ingredients
- 1 cup unbleached all-purpose flour
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 large egg, beaten
- 1 1⁄4 cups sour cream or 1 1/4 cups plain Greek yogurt
- 3 tablespoons milk
- 1 cup raspberries, rinsed and well drained
- 4 ounces white chocolate baking bar, chopped
directions
- In a large mixing bowl sift the flour, baking soda, and salt.
- In another smaller bowl add the egg, sour cream, and milk, whisk to blend.
- Add the liquid ingredients to the dry ingredients carefully fold together; fold in raspberries & white chocolate.
- Heat a griddle, spray with non stick cooking spray.
- Pour approximately 1/4 cup batter onto griddle for each pancake.
- Turn pancake and cook until other side is lightly browned.
- Serve plain, with whipped cream, and/or powdered sugar.

This turned out horribly. The batter was the consistency of bread dough (or just about) so I ended up mixing in about another 1/4 cup of milk. My family all said it tasted like raw dough. We ended up tossing everything and pulling out a box of hungry jack and adding in white chocolate and raspberries or blueberries. My suggestion is to find your own favorite home made pancake mix recipe and just add in what you want. I can't believe this recipe is even on here.
