- 1⁄2 cup oatmeal
- 1⁄2 cup whole wheat flour
- 1 tablespoon ground flax seeds
- 2 teaspoons baking powder
- 1⁄4 teaspoon pumpkin pie spice
- 1⁄4 teaspoon salt
- 1 egg, separated
- 3⁄4 cup milk
- 1⁄4 cup mashed banana
- 1 tablespoon canola oil
directions
- Process oatmeal in a blender until it's flourlike in texture.
- In bowl, mix flours, flax seed, baking powder, pumpkin pie spice, and salt.
- In a second bowl, mix milk, banana, oil and egg yolk.
- In a third bowl, beat egg white until stiff peaks form.
- Mix banana mixture with dry ingredients, then fold in egg whites.
- Cook approximately four minutes in waffle iron.
