- 1 cup whole wheat flour
- 1⁄3 cup soy flour
- 1⁄4 cup ground flax seeds
- 1 teaspoon baking powder
- 1⁄4 teaspoon cinnamon
- 1 tablespoon maple syrup
- 1 tablespoon vanilla extract
- 2 tablespoons olive oil
- 1 egg white
- 1 1⁄3 cups milk
- salt, to Taste
directions
- Mix together all dry ingredients in a bowl.
- Mix together all liquid ingredients, except egg whites, in a separate bowl.
- Beat egg white until stiff, set aside.
- Add liquid ingredients to dry ingredients. Stir and fold in egg white.
- Bake on hot waffle Iron.
- Variations: add grated orange rind or fruit, such as blueberries to batter before baking.
