- 1 cup wheat flour
- 1⁄4 cup Splenda sugar substitute
- 1 1⁄4 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup low-fat buttermilk
- 1⁄4 cup egg substitute
- 1⁄4 cup low-fat margarine, melted
- 3⁄4 cup fresh blueberries or 3/4 cup frozen blueberries
directions
- Mix first five ingredients in a bowl until well combined.
- Mix Egg Beaters and buttermilk and slowly stir into the dry mix. Stir in melted butter.
- Heat a non-stick skillet or griddle to medium heat.
- Pour 1/4 cup of the batter onto hot skillet. Add blueberries (as many as you'd like) and press down slightly to get them to cook into the batter).
- Cook for 2 minutes on both sides.
- Repeat with remaining batter, and EAT.
