Whole Wheat Cherry Dark Chocolate Almond Cookies

- 3⁄4 cup sugar (I use sugar in the raw)
- 1⁄4 cup brown sugar
- 1⁄2 cup butter, softened
- 1 large egg
- 1⁄2 teaspoon vanilla extract
- 1⁄2 teaspoon cinnamon (i use a 1/2 tsp..we like cinnamon!)
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup whole wheat flour
- 1 1⁄4 cups quick-cooking oats (not instant)
- 3⁄4 cup dried cherries, coarsely chopped
- 1⁄2 - 2⁄3 cup sliced almonds
- 6 ounces dark chocolate, coarsely chopped
directions
- Preheat oven to 375
- In a large bowl combine sugar, brown sugar, and butter; mix well to cream together.
- Add in egg and vanilla extract, mix well.
- Add cinnamon, baking soda, salt, and flour, mix well.
- Fold in oatmeal, dried cherries, almonds, and dark chocolate - making sure that all ingredients are uniformly distributed (will be rather crumbly).
- Roll or smoosh into ball like shapes and place on a greased cookie sheet, bake for 9-11 minutes, until edges are golden/brown
- Remove from oven and let cool on sheet 2-3 minutes, transfer to cooling rack.

Wonderful tasting cookies, these! I particularly like the use of whole wheat in them, & also the combo of dark chocolate & cherries! Definitely a cookie I'd like to see on my finger food counter the next time I host one of my monthly groups!
