Whole Wheat Flax Honey Muffins With Carob (Or Chocolate)

"This recipe is so adaptable. I have made them as listed below, or with walnuts, or blueberries, etc... I am mainly posting so I can see the nutritional value, but if you try them I hope you enjoy them as we do. They are not a super sweet muffin and I sometimes use turbinado sugar in place of the honey. I always use organic ingredients right dowon to the baking powder, but that is obviously optional here."

i am a stay at home mother, formerly a kindergarten teacher. one of my favorite cookbooks is "home cooking" by laurie colwin. i love to cook but other than my 3 yr old daughter and myself, i really dont have anyone to cook for. my daughter eats lots of broccoli and fresh garlic dishes and loves to help me in the kitchen preparing the food that she and i eat. i try to follow a strict organic lifestyle as best i can for my daughter and i.
