- 1⁄2 cup whole wheat flour
- 1⁄2 cup oat flour
- 1 tablespoon sugar
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon baking soda
- 1 teaspoon baking powder
- 1 egg
- 2 tablespoons applesauce
- 1 cup buttermilk
- chocolate chips (optional)
directions
- Preheat griddle to 300. Scramble egg and mix in apple sauce. Sift and add dry ingredients. Pour buttermilk on top and mix by hand until lumps are mostly mixed. Spray a light coat of non-stick spray on griddle. Measure 1/3 cup of batter. If desired, add a few chocolate chips to each one, dabbing them into the batter to cover. Cook until light brown (about 3 1/2 minutes on one side and 2 minutes on the other). Flip carefully. Continue to cook until the middle is done (do not overcook).
