  1. Use fresh, in date baking powder & soda & add to dry ingredients through sieve to ensure you don't chew on a lump of baking powder.
  2. Add egg & milk, whisk until just combined but don't over mix. Mixture consistency should pour off the whist but still cling to it, -- Similar to cake batter.
  3. Let mixture rest for 15 minutes or so to hydrate the flour (add a touch more milk if mix becomes too thick.
  4. Cook over medium heat on a cast iron or non stick pan without butter or oil, for about 2-3 minutes per side or until brown.
