“I like to have a good supply of overripe bananas in my freezer for those times when I get a craving for banana cake, however, they also come in handy for this cheats ice cream which is sooo healthy and sooo easy you could always use a fruit sauce instead of honey or indulge a little by using cream instead of milk and maple syrup instead of honey Brilliant for when surprise guests turn up or when the kids need pacifying , just remember to peel the bananas before freezing, or well,,,good luck trying to peel frozen bananas! Cooking time is freezing time.”

  1. Peel the bananas and place them in the freezer for several hours or until completely frozen.
  2. Place the bananas and milk in a food processor, blend on full power for 3 mins, stopping occasionally to scrape the sides.
  3. Add the honey and continue blending until completely smooth.
  4. Serve with fresh fruit or nut sprinkles.
