Wicklewood’s Mock Banana Ice Cream

"I like to have a good supply of overripe bananas in my freezer for those times when I get a craving for banana cake, however, they also come in handy for this cheats ice cream which is sooo healthy and sooo easy you could always use a fruit sauce instead of honey or indulge a little by using cream instead of milk and maple syrup instead of honey Brilliant for when surprise guests turn up or when the kids need pacifying , just remember to peel the bananas before freezing, or well,,,good luck trying to peel frozen bananas! Cooking time is freezing time."

  • Peel the bananas and place them in the freezer for several hours or until completely frozen.
  • Place the bananas and milk in a food processor, blend on full power for 3 mins, stopping occasionally to scrape the sides.
  • Add the honey and continue blending until completely smooth.
  • Serve with fresh fruit or nut sprinkles.

However, nessesity really is the mother of invention; instead of feeling sorry for myself and my dietry limitations,,,I got creative.
