Wicklewood Wench's Creamy Garlic Chicken

- 226.79 g chicken tenders
- 29.58 ml olive oil
- 113.39 g button mushrooms, sliced
- 113.39 g sweetcorn
- 3 large garlic cloves, crushed
- 226.79 g double cream
- 44.37 ml cream based salad dressing (I prefer Mary Berry's lemon & thyme sauce, but a garlic and herb dressing is also a favorite with ga)
- 1 bunch spring onion, sliced
- 1.23 ml ground black pepper
- 0.25 ml salt
directions
- Over a medium heat, gently fry the chicken and garlic in the oil until just cooked.
- Add the mushrooms.
- Stir in the dressing or sauce, making sure all ingredients are well coated and cook for a further 5 mins, stirring occasionally ensuring the dressing/sauce doesn't burn.
- Add sweetcorn, cream and 2/3 of the onions .
- Continue to cook on a medium high heat until cream begins to boil. Remove from heat.
- Season to taste, serve on a bed of tagliatelle Verde, garnish with remaining 1/3 of onions.

<p>I have always loved my food (not just my own but anyone's who offered it to me),,, then five years ago I was diagnosed with ceoliacs disease and all notion of ever having my favorite foods again went out the window. However, nessesity really is the mother of invention; instead of feeling sorry for myself and my dietry limitations,,,I got creative. I am in the process of starting my own business, which initially was exclusively targeted at ceoliacs, but thanks to my new husband and his diabetes, we hope to create food that is not only gluten free and sugar free or low carb, but will also cater for those amongst us with a whatever attitude to healthy food...Yes I do have one left at home,,bring on the empty nest.</p>
