ingredients
- 4 large baking potatoes (Leave skins on)
- 2 tablespoons parmesan cheese, grated
- 1 teaspoon onion powder
- 1 teaspoon garlic salt
- 1 teaspoon dried herbs
- 1 teaspoon seasoning (or à 1/2 teaspoon salt & à 1/2 teaspoon black pepper)
- olive oil flavored cooking spray
directions
- Preheat the oven to 200c and pre heat a dry shallow baking tray.
- Cut the potatoes into wedges and spray with olive oil.
- Microwave on high power for 5 minutes.
- Meanwhile mix all the other ingredients together in a large bowl.
- Add the potatoes and mix well ensuring all wedges are coated.
- Spray the preheated baking tray with olive oil.
- Spread the wedges over tray and lightly spray once more.
- Bake in oven for 30 mins turning occasionally.

I really enjoyed these. Like the previous reviewer, I wondered about the oven temp....my oven only goes up to 500 F! So I reduced to 425 as well, and since I halved the recipe I reduced the cook time. I did use half the seasonings as suggested...I'd eliminate the salt next time, I thought there was enough salt from the garlic salt. I thought these turned out quite beautiful....a potato side I am proud to share! Thanks Wicklewoodwench! Made for Photo Tag!

<p>I have always loved my food (not just my own but anyone's who offered it to me),,, then five years ago I was diagnosed with ceoliacs disease and all notion of ever having my favorite foods again went out the window. However, nessesity really is the mother of invention; instead of feeling sorry for myself and my dietry limitations,,,I got creative. I am in the process of starting my own business, which initially was exclusively targeted at ceoliacs, but thanks to my new husband and his diabetes, we hope to create food that is not only gluten free and sugar free or low carb, but will also cater for those amongst us with a whatever attitude to healthy food...Yes I do have one left at home,,bring on the empty nest.</p>
