Wild Huckleberry Jam

  • Wash huckleberries and check for stems.
  • Place berries and water in deep saucepan or pot.
  • Slowly bring to a boil.
  • Add the sugar all at once.
  • Bring to a roiling boil, then cook for 2 minutes.
  • Remove from heat.
  • Add the Certo packet and stir for 3-4 minutes.
  • Pour into jars (note: do this as quickly as possible- it will start to set almost immediately).
  • Seal using method of choice. Boil for 10 min (if your altitude is between 3,000 and 6,000) then let cool.

  1. Does it work to freeze the huckleberries then thaw them and make jam at a later date? Huckleberry picking time is now, but I don't have time to make jam this weekend.

  3. I made this wild huckleberry recipe and the jam didn't set up??! My store didn't have liquid pectin so I used the powder package but that is the only thing I did differently. I thought it would work! What can I do now?? The flavor is wonderful but it is like syrup.

  1. First I'll say, I'm from Montana, where huckleberries roam free. But I don't like them. I picked some and made this for my son. Second, I love this recipe!! It's not too sweet, just the right amount of sugar, so it's perfect! I will definitely be making this again!!! It filled 7 half pint jars. Thank you for sharing :-)
     
  2. Meh, this is too syrupy, lacks any brightness. Lemon could enhance that, also bourbon on the finish could make it more savory. 3 stars because I can use it as an ingredient. It’s definitely not a jam.
     
  3. I froze my huckleberries and then used them to make jam and it worked out great.
