Wild Mushroom Stroganoff

"Another ZWT III recipe. A nice substitute for the beef dish whether you're a vegetarian or not. This is an adaptation from another one of those 1,000 Vegetarian Recipes. This is a very hearty and filling dish."

  • Melt the first amount of butter over medium heat and add the shallot, cook until tender.
  • Add the mushrooms to the pot and cook until tender.
  • Add the broth, wine, and salt and pepper if desired. Bring to a boil and then turn down heat and simmer for about ten minutes.
  • While the sauce is simmering, in a separate pot melt the second amount of butter over medium heat.
  • Stir the flour into the butter until absorbed to make a roux.
  • Pour the mushroom mixture into the roux and bring to a boil, turn down the heat and stir until thickened.
  • Stir in the heavy cream and parmesan cheese, and parsley.
  • This can be served over rice or pasta -- but secretly sometimes I just eat it like a stew by itself with some crusty bread. Yum yum.

  1. Super tasty! And easy to make vegan - we sub the butter for olive oil and used silk creamer for the cream! We also added lots of garlic!
     
  2. Thyme is listed in the ingredients list, but not in the directions. I had prepped all my ingredients then followed the recipe. After it was cooked, I realized my thyme was still in the bowl. At what point is it supposed to be added to the recipe???
     
  3. Don’t make this for your vegan friends! It has a vegan banner on it but it has butter, cream and cheese in it- sounds like a good recipe for non vegans.
     
  4. Very good recipe and very easy. Two small changes, I used 2 small garlic cloves (I love garlic) and 2 shallots. I just wanted a bit more onion flavor. But otherwise as is.<br/><br/>I served it over pappardelle pasta and garnished with scallions just because I had them on hand. It was very very good. Rich and tasty. Will be making again. Excellent recipe. I enjoy making a meatless meal once a week and this tasted just as good or better.<br/>Thx
     
  5. Wow! Delicious flavors! Then, I added some peas and a can of baby clams! I had to use dry sherry instead of white wine, which I thought enriched the flavors. This would be good over angel hair pasta but I didn’t want to add more carbs! A really excellent stand alone recipe! Thank you!

  1. Try this: red wine instead of white, beef broth instead of vegetable, sour cream instead of heavy cream. SO delicious!
     
  2. Wonderful! I made this dish with my boyfriend who has PKU (so he has to watch his protein) and it was very flavorful! We substituted mashed potatoes for pasta although perhaps in the future to give it more texture I would serve it over baked potato. Thanks!
     
  3. We love this! I did change it up a bit, since i was using things i had on hand. I replaced the veg broth with "not beef" broth and used a can of vegetarian mushroom gravy in lieu of heavy cream. I also upped the amount of liquids a little and just tossed in noodles and let them soften. delicious! Next time i'd like to try the exact recipe. :) thank you!
     
  4. Wow. I was in the need for a something comforting and easy and quick. This was perfect. I used low fat sour cream instead of heavy cream and rather than broth, i had some fresh wild mushrooms as well as dried morels and i used the soaking broth from the dried mushrooms. Also a little tarragon. Served over toasted english muffins

I've lived in Tucson for about five years now, and the experience has been great for my palate! For those of you that don't know, Tucson is a culinary Mecca; tons of amazing flavors, foods, and restaurants to investigate. The above photo is a picture of my husband and I on our wedding day. He's the light of my life, and the main reason I'm glad I moved out here to the desert because I never would have met him if I hadn't!! To top it off, he's a great eater. It doesn't matter what I make, even if he doesn't like it he tells me between bites. (haha!) He loves my obsession with the Zaar because he's been eating really well since I started with the site. We recently bought our first house which is a starter home that we are working very hard on remodeling. Anyone with free advice for newbie homeowners lemme know because it has been a whirlwind!! I am currently a full time employee at the UofA (GO WILDCATS!) and I love my job and the people that I work with. I am also a part time student seeking a Masters degree in Administration. I can't wait to be finished so that I can relax for a little while, cook, work on my house, and play with my two beautiful children who are pictured below (yes I'm aware that they are dogs, but they are OUR kids!!) The one on the left is our little blue heeler mix that we call Rumplestiltzkin (Bumpy for short) and the one on the left is the sweetest Chow Retriever Mix you'll ever meet. His name is Gaizen. The picture of the two dippy looking people on Segways is one of my husband and I in Disney World this last October. We were soooo lucky to beable to go on the segway tour it was loads of fun! The cutie patutie right beside us is my little niece Rylee who I don't get to see nearly enough since my sister live in Ohio. She's couldn't be sweeter if you spread icing on her. The picture of the cake is one that I made for my DH's 27th birthday because he loves fish tanks. Anyone that wants the ingredients and how to build it lemme know it's really easy!! My Rating System: 5 stars-RUN don't walk to your grocery store, buy the ingredients and make this! 4 stars-Great recipe and I want to try it again but would probably make changes to it 3 stars-Pretty good recipe that I liked but probably will only make occasionally I don't like to give less than three stars because everyone is different and has different taste buds. I also will not give a recipe less than four stars if I myself made changes to the recipe and then didn't like the way it turned out. If I screw a recipe up entirely (I have been known to do this especially with baked goods) I don't bother even rating it. The one thing that is really hard to say here at the Zaar is "I will definitly make this again" not because soooo many recipes that I have tried are not worthy of making again, but because there are so many more out there that I haven't tried yet!
