  1. Cook rice in 1 cup chicken broth, 1 cup water.
  2. Cook quinoa in water.
  3. Chop unchopped veggies and throw into a bowl.
  4. Pour the canned beans, tomatoes, and artichoke hearts into a colander and rinse out the extra juices.
  5. Combine all ingredients in a large bowl and mix together.
  6. Enjoy the deliciousness.
