- 1 (14 ounce) can chicken broth
- 1 cup uncooked quinoa
- 1 cup uncooked wild rice
- 1 (14 ounce) can diced tomatoes
- 1 (14 ounce) can red kidney beans
- 1 (14 ounce) can artichoke hearts
- 2 large stick celery, chopped
- 2 green onions, chopped
- 1 1⁄2 cups raw Baby Spinach, chopped
directions
- Cook rice in 1 cup chicken broth, 1 cup water.
- Cook quinoa in water.
- Chop unchopped veggies and throw into a bowl.
- Pour the canned beans, tomatoes, and artichoke hearts into a colander and rinse out the extra juices.
- Combine all ingredients in a large bowl and mix together.
- Enjoy the deliciousness.
