Wild Rice, Orzo and Mushroom Casserole

- 1 cup orzo pasta
- 1 cup wild rice
- 2 1⁄2 cups beef broth
- 8 cups mushrooms, sliced (either white or mixed)
- 1 tablespoon oil
- 2 tablespoons butter
- 1⁄4 cup parsley, chopped
directions
- Cook orzo according to package directions. Cook the wild rice in the broth according to package directions.
- Saute mushrooms in oil and butter and cook until liquid has almost evaporated.
- Add mushrooms and parsley to rice and orzo. Mix well,
- Bake at 350 for 30 minutes or until heated through.

All of the ingredients sound like they would go well together. I'm wondering why bake it if you are putting the ingredients together at the time of cooking. Put it in the oven with grated parmesan on top. I used baby bella mushrooms and dried shitake. I think I willuse the leftovers (including pasta water and any remaining broth) to make a hamburger wild rice soup.
