Wild Rice Quiche

  • 13 cup of julianne strips Canadian bacon
  • 1 small onion, diced
  • 1 unbaked pie shell (I cheat and buy the frozen)
  • 1 cup shredded monterey jack cheese
  • 1 cup cooked wild rice
  • 3 eggs
  • 1 12 cups light cream
  • 12 teaspoon salt
  • 1 dash hot pepper sauce

directions

  • Heat Oven to 350.
  • Fry Canadian Bacon and onion until onion is cooked through.
  • Spread mixture evenly in pie shell.
  • Sprinkle with cheese and Wild Rice.
  • Whip eggs, cream, salt and hot pepper sauce until well blended.
  • Pour over Wild Rice mixture.
  • Bake for 50 minutes or until center of Quiche is set.

I am married and the mother of 2 sons 16 and 21. The "wicked step mother" of a daughter who is currently serving our country in Iraq. I have worked in social services for the county for 26 years and am counting down 5 more until I can retire. Cooking has always been my form of relaxation and have been blessed to have a household of eaters who are ready to take on whatever I am cooking at the time. My friends and family know that food is my comfort and they are always more than welcome to be here for a meal and are happy to take home the leftovers. I have enjoyed trying many recipes I have found here on zaar but have not always been the best at reviewing them. I am going to try and get better at that. Now to find the time to post my own favorites. Just found out my daughter can come home by Thanksgiving Yeah That will send me on a cooking frenzy.
