  • While rice is cooking, cut bacon into pieces and fry until crisp. cook onion in same pan.
  • When rice is cooked, add bacon (with drippings) and onion along with butter and stir until melted.
  • Add cheeses and sour cream. Add milk by the tablespoon so mixture is creamy, cook over low heat until cheese is melted and everything is well combined.
  • *Omitting bacon would make this a vegetarian option.

originally from ND...we moved back to northern ireland last year (where my husband is from) it is SO interesting to be immersed in culinary heaven....fresh ingredients are abundant and cheap and i love to experiment. another fav past-time is looking for substitutes on my fav american products and finding out what they are called over here! (ie: treacle=molasses) my all time fav cookbook has to be good ol betty crocker!
