  • Cook wild rice in water according to package directions.
  • Grill chicken, and cube into bite size pieces, set aside.
  • Combine mayonaise with seasoned salt,set aside.
  • When the rice is cooked, drain if needed.
  • Combine all ingredients, refrigerate and serve when completely chilled.

When I find a new recipe, I almost always change it to make it lighter, and healthier, without sacrificing taste! I love fish recipes, slow cooker recipes, and Mexican food (of course being from Texas), which is a challenge to make lighter. My all time favorite cookbook is Joy of Cooking. I know it's a boring old classic, but whenever I am stumped for something, it's the first one I turn to. I tend to be a cookbook collector, as I'm sure most of you are, so it's really hard to name just one. I like to think that each one serves its own purpose.
