  • Place lettuce or spinache and onions in a large salad bowl.
  • Sprinkle with pepper; set aside.
  • In a large skillet, cook bacon until crisp.
  • Do not drain off drippings.
  • Stir in vinegar, lemon juice, sugar and salt.
  • Pour over lettuce and toss gently until well coated.
  • Top with hard-cooked egg.
  • Serve immediately.

  2. My husband and I loved this! It was so good, very different. My stepmother use to make something similar but I don't remember the hard boiled egg, but try it anyway and it gave it such a good favor. I used leaf lettuce, but next time I think I wil try spinich.

I am married and have three children ages 9 to 16. I work full-time so between work and attending as many school functions as I can possibly fit in, I have little time to prepare "gourmet" type dishes which require a lot of preparation time. I like tasty, quick-fix meals that use ingredients that are usually in my house and don't require an extra trip to the store. When I'm not waiting on my family or working, I like to do counted cross-stitch and recently started a new hobby----quilting.
