Winnie's Apple Cake

"Many years ago a dear co-worker shared this recipe with me. Fairly quick to make with few ingredients.It has been a family favorite and my newly married daughter has requested it for her recipe box, too. It bakes into a really dense and hearty loaf rather than a cake. Depending on the juiciness of the apples, the baking time varies so be sure to test it with a toothpick to see if it is done. Otherwise, it will be a mass of "goo" in the center of the loaf! Hope you love it as much as we do!"

  • Beat egg and sugar.
  • Add oil, baking soda, flour, and salt.
  • Mix in apples.
  • Batter will be VERY thick.(Apples make own liquid).
  • Add chopped nuts and vanilla.
  • Bake in greased and floured loaf pan at 350°F for approximately 40-45 minutes.

Hi! I am a weekend cook! I live alone and work in a daycare center, so almost every weekend I spend one day cooking up a storm and freezing lots of goodies. Love Greek/Turkish cuisine, comfort foods, of course chocolate, flavored coffees, and a good glass of wine at the end of a long day. Love reading new recipes and trying them and so far I haven't found ANY I DON'T like on the Zaar! Love to bake and share the bounty with my co-workers. No sense gaining weight alone, right? LOL!
