Winter Greens With Carrots, Balsamic, and Brown Rice

"This recipe originally comes from Whole Foods Market's monthly publication. I modified it a bit. I love it because it contains dark leafy greens which are a nutritional powerhouse. This recipe is a lovely complement to any meat dish, but it has enough flavor to stand all by itself too. NOTE: prep time does not include time to prepare rice. To cook rice, follow directions on package."

I'm an 8th grade English teacher in Las Vegas. I'm happily married, and have developed a LOVE for cooking now that I have someone to cook for! Besides my new-found love of cooking, I also love to read and quilt. Our favorite thing to do on weekends or days off is head to the mountains for some camping and fishing.
